While pigeons grow pretty fast, they breed by laying eggs and do it very beautifully. Pigeons can mate, lay eggs and breed any time of the year but mostly happens in spring and fall. But before they need to choose a pair and mate with it which is the sensitive part. As pigeons mate for life, they are very sensitive in choosing their pair.

After that, they will step into laying eggs, incubating and hatching it. But if the pigeon ends up without partner, it may lay eggs but that will not hatch, because the eggs will be infertile which you can then eat.
